Oil palms begin producing fresh fruit bunches (FFB) after 3-4 years and can continue yielding fruit for 20-30 years. Harvesting, typically done manually with sickles or motorized cutters, requires the fruits to be collected at peak ripeness to ensure high oil quality and yield. Once harvested, the FFBs are rapidly transported to mills to prevent fermentation and degradation of quality. At the mill, the bunches are steamed under high pressure during sterilization to inactivate enzymes and loosen the fruits, followed by mechanical threshing to separate the fruits from the bunches.

The fruits are then crushed to extract crude palm oil (CPO) from the mesocarp, while the kernels are separated to produce palm kernel oil (PKO). The extracted oil undergoes clarification to remove water, solids, and impurities. Crude palm oil is further refined through degumming, bleaching, and deodorization to eliminate free fatty acids, odors, and colors. Fractionation then separates the oil into palm olein, which remains liquid at room temperature, and palm stearin, a solid. Palm oil is widely used in cooking oil, margarine, biofuels, and industrial lubricants, while palm kernel oil is essential in cosmetics, soap, and personal care products. By-products such as biomass are also utilized for energy, animal feed, and fertilizers.
